What is the recommended humidity level in home? I'm in Arizona if that matters.

According to a professor at NDSU:
Recommended humidity level in the winter is 30 to 40 percent in cold climates. A relative humidity above about 40 percent increases the potential for condensation on windows and other cool surfaces. Humidity levels below about 30 percent lead to dry skin and nasal passages, increasing the potential for respiratory illnesses. Overly dry air can inflame the symptoms of sinusitis, lead to laryngitis and get in the way of a good night's sleep. Also, low humidity levels cause problems in furniture and pianos due to wood shrinkage and increase the incidence of static electricity shocks.
During the summer, indoor humidity levels should be kept below about 65 percent to minimize the potential for mold growth and below about 50 percent to minimize dust mites.
In my opinion, the best thing to regular humidity in your home is the Aprilaire Model 500 Automatic Whole-house Bypass Humidifier
40-45 % would be ideal. However, when in cooling mode it would not be uncommon to see levels around 55%. Which would be an acceptable level of humidity. Remember when running AC your air condition is basically a giant dehumidifier. In the winter you want to add humidity as when in heating mode your want to add humidity do a whole house humidifier would be recommended and the ideal setting would be 45%. By adding a whole house humidifer to your system you actual increase the efficency of the heat by introducing proper levels of water into the air. IE humidity and in turn you system runs less as the air is able to retain a higher amount of heat. Im giving you the crash course version which is more than your question asked.

the best way to reduce humidity is to run the dehumidifier on “full” for 24 hours with all internal doors open and then turn it down to “normal”, relying on the humidistat setting to maintain the desired humidity level by moving it from room to room?

40%-45%. Don't go over 50% to avoid molds. Less than 30% is too dry, you'll get sinus/ headache and other sickness problems.

I find most of our costumers seem to most comfortable at 48% heating and 23% in cooling.
