I'm only going to suggest this method for people who use the butcher block counter tops as a tool. Not for those who want to keep it looking like the furniture in their best room.

I made my counter tops with 8/4 hard maple, and used water proof glue. I coat them monthly with mineral oil, which is a food safe product found at the drug store or grocery, and used for getting your pipes running regularly, if you know what I mean. I scrape them or sand them when the knife marks or burns get to the point of supporting anything that may live. I spray them with a light bleach solution after cutting meat or poultry. I designed my kitchen to be user friendly with open shelves and easy access to tools, so the counter had to be the same. User friendly!

I would recommend that you always use a portable chopping block or silcone sheet for your food preparation. You can put them in the sink and disinfect them properly.



For your countertops, treat them like any other piece of wood. You should them wipe clean with a damp cloth, and do not use abrasive detergents. Light stains can be removed with a damp sponge in water or a mild soapy solution, or with a fine sandpaper.



Regular treatment with BEHANDLA (available online at IKEA) wood treatment oil prolongs the life of the countertop.

Mineral oil is recommended for cutting boards. Are you going to be using the whole countertop for cutting and chopping? If not, you could use Polyurethane. Don't use this if you will be cutting food on the surface.
